Oct 22, 2013 I Never Liked Cod Before the Jia Steamer... I know that cod is the great American fish. That it fed the colonists and made fortunes for fishermen. But I never could figure out why anybody liked it. Until tonight. I had been reading Ben Franklin, one of my main heroes. He wrote that he became a vegetarian as a young man, until the night he smelled frying cod. It smelled so good that he went back to eating fish. When I saw line-caught Icelandic cod on sale at Whole Foods this afternoon, I took the hook. I found a Basque recipe in Joy of Cooking, seasoned the filet with Spanish pepper, and put it in my Jia steamer for 10 minutes with white wine, tomatoes, onion, garlic, thyme, olives and bay. Yeah! What a noble fish! What a feast. This was the first time I had used the Jia for something other than beef stew and broccoli (it does both very well), and I was amazed at the flavor.
